Thai has “sun dried fish with watermelon”🍉 😊

This savory sweet treat is served as amuse-bouche, appetizer, or a “just-because” during the hot day. 
The crumbling topping is toasted fish flake (sun dried snakehead fish), crispy fried shallot, and granulated sugar to add to the texture and flavor. Rarely see in Thai restaurants but if you’re luck to find one, must try.

Ya-Chong (Crinum thaianum) is a unique emergent plant native to southern Thailand. When deep-fried in a flavorful curry paste batter, it becomes a signature dish of Phuket cuisine known as “Bua-Thod.” This dish features a mix of edible leaf fritters, often combined with small shrimp, and is typically served with “Nam Chor,” a tangy, sweet, and mildly spicy red dipping sauce. While it’s not commonly found in markets, if we’re fortunate enough to source some, we’d be excited to share it with you in our classes!
